Mornings are when I crave carbs: potatoes, toast, and congee, please. But I would love to find a way to incorporate more vegetables. Turns out that breakfast can actually be one of the easiest meals for adding vegetables, since you're probably cooking and eating it at home.
1. Embrace other root vegetables besides potatoes.
While hash browns are one of my favorite things to eat in the morning, there are so many other flavorful root vegetables than can be baked, shredded, fried, or hashed instead. Try sweet potato, turnips, or even beets and get some extra vitamin boosts from these colorful root veggies.
2. Move your lunch salad to breakfast instead.
There's no reason why raw vegetables and salads can't be eaten for breakfast, especially when the weather's warm or your crisper drawer is overflowing with vegetables you need to eat up. Serve the salad with soft-boiled or poached eggs or toast to make it more breakfast-like, and don't forget that you can top scrambled eggs with vegetable mixtures like chunky salsa!- 3. Skip the toast and serve your eggs with sautéed greens instead.
- It's a great feeling to start off a busy day knowing you've already had a serving or two of greens, and the easiest way to do that is to just sauté some up and serve with eggs. Whether you cream them, simply cook them with garlic, or flavor them with bacon is up to you, but it'll probably take the same amount of time as toasting bread if your greens are washed and ready to go. To make things even easier, just cook up a big bunch of greens for dinner and use the leftovers for breakfast!
